Mini Quesadilla

Ingredients:

2 taco-sized soft flour tortillas
Shredded cheese
Pico de Gallo or salsa
Sour cream

Directions:

1. Heat a small amount (like 1/2 tsp or less) of butter in a small saucepan over medium heat.
2. On one tortilla, spread a layer of shredded cheese.
3. Add a thin layer of pico/salsa.
4. Top with another layer of shredded cheese and the other tortilla
5. Put in pan, press down with a large spatula, cook for 2 min.
6. Flip and cook 2 min more.
7. Remove from heat, cut in half or quarters with a pizza cutter.
8. Spread a thin layer of sour cream on top, or use it for dipping.

You can also cook it in a sandwich maker or waffle iron. Preheat the iron and cook the quesadilla for 3-4 minutes.
