Baked Nachos

Ingredients:

1lb ground beef (or 3 decent size chicken breasts)
1 bag of your favorite tortilla chips (you won't use it all)
1 can black beans, drained and rinsed
1 large tomato, diced
1 small onion, diced
1 TBSP chili powder
1 tsp each onion powder, garlic powder, cumin, cayenne
1/4 cup water
1 cup shredded cheese (or more to taste)
2 stalks green onion, chopped
1 jalapeno, diced
A handful fresh cilantro, chopped
Shredded lettuce
Sour cream

Directions:

1. Preheat oven to 350F
2. Brown beef in a medium saucepan over medium heat. (if using chicken, cook through then shred with a fork before next step). Drain any excess grease/liquid.
3. Add tomato, onion, jalapenos, black beans, seasonings, and water.
4. Bring to a simmer, and simmer for 5 minutes.
5. While beef is simmering, get out a 9x9 pan and put a layer of chips in the pan.
6. Put half the beef & bean mixture on top of the chips.
7. Top with half the green onions then half the cheese.
8. Do another layer following the same pattern above.
9. Bake 13-17 minutes - until cheese is completely melted.
10. Top each plate with sour cream, cilanto, and lettuce right before serving.
