Root Vegetable Smash

Ingredients:

1 medium parsnip (don't use a large parsnip, they can be woody and have a gross core)
2 carrots
3 red potatoes
1 small onion, diced
1 clove garlic, minced
2 strips bacon
1/2 stick butter
1/4 cup milk or cream
2 stalks green onion, chopped
1 tsp parsley
salt & pepper

Directions:

1. Wash, peel, and chop the parsnip, potatoes, and carrots.
2. Put them in a medium pot and cover them with water, add a pinch of salt. Cover.
3. Heat to boiling and boil until vegetables are soft, 30ish minutes.
4. In a small saucepan, saute bacon until crispy, then rougly chop. Saute onion and garlic until onion is clear.
5. Drain water from vegetables and put back in the pot, add sauteed ingredients.
6. Add butter, milk, and salt & pepper to taste.
7. Smash all together, adding more milk and/or butter until desired creaminess is reached.
8, Garnish each serving with green onion and parsley.
