Fry Bread Tacos

Ingredients:

For Fry Bread
2 cups flour
1 cup milk
1 TBSP baking powder
1 TBSP olive oil
1 tsp salt
oil for frying

For Filling:
1 lb ground beef or turkey
1 tomato, diced
1 small onion, diced
1 can black beans, drained and rinsed
1 jalapeno, diced with seeds and membrane removed
2 cloves garlic, minced
2 TBSP chili powder
1 tsp each garlic powder, onion powder, cayenne, cumin, salt
1/4 cup water

For Topping:
lettuce
shredded cheese
sour cream
cilantro
avocado/guacamole
basically whatever you want, added to taste


Directions:

1. In a large pan over medium heat, start browning ground meat.
2. Start fry oil, you want it to be 350-375F
3. Dice veggies while meat is browning. Stir meat occasionally so it browns evenly.
4. Drain grease from meat.
5. Add all other filling ingredients, stir well.
6. Bring to a simmer, reduce heat to low.
7. Make dough by mixing all ingredients in a medium bowl until an elastic ball is formed.
8. Let dough rest 5-10 minutes.
9. Meat should still be simmering on low.
10. Dive dough into 8 portions, and flatten each out to a thickness of 1/4 inch.
11. Fry each dough round 2-3 minutes, flip, fry 2-3 min more. Dough should be golden.
12. Drain oil off dough.
13. Top with filling and toppings.

Makes 4 servings - 2 tacos per person.
