Brunch Egg Cups

Ingredients:

8 eggs, beaten
1 tube biscuits (8 biscuits)
2 strips bacon, cut into quarters
shredded cheddar cheese
hot sauce
salt & pepper

Directions:

1. Preheat oven to 400F and lightly grease a muffin pan.
2. Gently flatten each biscuit to about 1/4 it's original thickness.
3. Lightly press each biscuit into the muffin pan, the dough should come up the sides of the cup.
4. Top each biscuit with approx 1 tsp of cheese.
5. Add egg. I beat and add each separately, but you can beat them all together and portion them out.
6. Add a pinch each salt & pepper and a few drops of hot sauce to each egg.
7. Top each egg with a piece of bacon.
8. Bake for 15-20 minutes.

I really love doing egg cups, especially for Sunday breakfast! I usually just grease a muffin tin, crack eggs directly into it, top with cheese and sometimes ham/bacon/veggies, bake for twenty minutes, and voila!

I really like this variant, though - may well try it soon!
