Naked Burritos



3/4 cup corn
3/4 cup black beans
4oz can green chilies, drained
1/2 tsp garlic powder
2 TBSP sour cream
1 stalk green onion, chopped

2 servings of cooked rice
1/4 cup chopped fresh cilantro
2 TBSP lime juice

1lb ground beef
2 TBSP chili powder
1 tsp each garlic powder and onion powder
1 small onion, diced


1. Brown beef together with onion in a medium pan over medium heat. Drain excess grease.
2. Add seasoning and mix well.
3. In a small mixing bowl, combine all ingredients for salsa, mix well.
4. In another medium mixing bowl, combine all ingredients for rice, mix well.
5. Layer rice, meat, and salsa in bowls and serve with tortilla chips.

You made me want to make this! I'd have to modify the recipe a bit (don't like corn, don't even know what cilantro is), but otherwise, NOM.

Cilantro is a leafy green herb you can find pretty easily at most groceries.

If you left out the corn, either use more beans/chiles or less sour cream and you'd be fine.

*googles* Oh, coriander! I'd never heard it called cilantro before.

Yeah I think cilantro is the "american" name for it. We probably stole it from the Mexicans. :)
