2 chicken breasts, cubed & cooked
1 small tube biscuits
1 can cream of chicken soup (or 1 can cheese soup if you want cheesy pies)
1 small onion, diced
1 clove garlic, minced
1/2 cup corn
2 carrots, chopped
1/2 cup peas (optional)
1 TBSP dried herbs
1 tsp chili powder
salt & pepper
Handful shredded cheese of choice
Directions:
1. Preheat oven to 350F
2. In a saucepan over med heat, saute onion and garlic in a little olive oil until onion is clear.
3. Add chicken, veg, soup, and seasonings.
4. Heat to simmering, let simmer for 5-7 minutes until sauce thickens a little.
5. Spoon into small ramekins (5-8oz size).
6. Flatten biscuits slightly and top each ramekin with a biscuit.
7. Sprinkle with cheese.
8. Bake 15-20 minutes until biscuit is browned.
