Cranberry Chocolate Chip Muffins


2 cups flour
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup milk
1/3 cup vegetable oil or melted shortening
1 egg
3/4 cup total of dried cranberries & chopped chocolate chips (semi-sweet, milk, dark, white, or any combination. I used white and milk.)


1. Preheat oven to 400F
2. Line or grease full size muffin pan (I don't recommend mini muffins for this).
3. Combine all dry ingredients in a mixing bowl.
4. Measure milk and oil together in a 2c measuring cup, add egg & vanilla and beat lightly.
5. Add wet to dry and mix with a fork until all combined, it should be lumpy like pancake batter but thicker.
6. Fold in cranberries and chocolate.
7. Spoon into muffin cups, fill each half way.
8. Bake 12-15 min for convection oven, 15-22 min for regular oven.
9. Cool on rack.

Makes 15-18 muffins depending on how much you fill each cup.
