Fried Eggs Benedict


2 eggs
4 tbsp butter, melted
1 TBSP lemon juice
1/4 tsp paprika
2 slices Canadian bacon (or 4 slices deli ham)
1 English muffin, sliced
1/2 tsp dried parsley
salt & pepper


1. Separate the eggs, set whites aside.
2. Whisk lemon juice into the egg yolks.
3. Using a double boiler, or holding a small pot/pan over a pot of boiling water, continue whisking yolks over the steam until they double in size. Be careful not to actually cook them.
4. Add butter into yolks a little at a time, continuing to whisk over boiling water.
5. Whisk until warm & frothy.
6. Set aside.

1. Fry egg whites in a small pan, seasoned with salt & pepper.
2. Top each half of the English muffin with a slice of ham and an egg.
3. Drizzle Hollandaise over open faced sandwiches.
4. Sprinkle with parsley and paprika.
