Herby cheesy mini muffins


1/2 cup water
1/2 stick butter
1/2 tsp salt
1/2 cup flour
2 eggs
1/4 cup grated cheese (cheddar or mozzarella is best)
1/2 tsp each thyme, oregano, garlic powder, chili powder


1. Preheat over to 425F
2. In a medium pot, heat water, salt, and butter over med-high heat until butter is melted and mixture boils.
3. Mix herbs into flour, add all of this to water at once, and reduce heat to medium.
4. Stir until a soft dough is formed and it starts pulling away from the pot.
5. Transfer to a mixing bowl and let cool ~5min.
6. Add egg and stir until incorporated.
7. Mix in cheese.
8. Scoop batter by small tsp full into greased mini muffin pan (or drop onto a cookie sheet)
9. Bake 8 min at 425F, reduce oven temp to 350F and bake 8-10min more. Do not open oven during baking or they'll collapse.

Muffins will be crisp on the outside and chewy & light on the inside. Makes 2 dozen muffins. Best served hot & fresh from the oven.

Absolutely going to try these for Dungeons and Dragons night. They sound amazing.
