Vegetable Chowder with Bacon


4 cups chicken broth
1 cup cream
4 strips bacon, chopped
1/2 onion, diced
3-4 cloves garlic, minced
1 cup corn
3 carrots, chopped
2 stalks celery, chopped
3 red potatoes, chopped
1 small zucchini or summer squash, chopped
1 tsp each each pepper, thyme, parsley, chili powder (or cayenne pepper)
salt & pepper


1. In a medium/large pot over medium heat, sautee bacon, onion, celery, and garlic until onion is clear. You shouldn't need butter or oil because of the bacon grease.
2. Add broth to pot along with carrots, potatoes, squash, and seasonings. Heat to boiling, then reduce heat and simmer for 20-30 min until potatoes are tender.
3. Add cream and corn, and heat to simmering (do not boil).
4. Serve with bread.
