Chicken Schnitzel


2 chicken breasts, trimmed and pounded thin
1/2 cup flour
1 egg
1 tsp mustard, preferably dijon or brown
1/2 cup potato flakes
lemon juice
chopped parsley
salt & pepper
2 TBSP butter


1. Start heating butter over med heat in a saucepan large enough to fit both chicken breasts.
2. Sprinkle chicken with salt & pepper. Dredge chicken in flour and shake off excess.
3. Beat mustard and egg together, and coat chicken with this mixture.
4. Dredge chicken in potato flakes, making sure to press it in so the chicken is evenly coated.
5. Place in pan and cook for 2-3 min each side, until coating is golden brown and chicken is cooked through.
6. Sprinkle each breast with a little parsley and lemon juice.
