Spiced Ginger Cookies


4 TBSP butter
1/4 cup light corn syrup
3 TBSP sugar
1 cup flour
1 tsp baking soda
1 tsp ground ginger
1/8 tsp each cinnamon, nutmeg, clove, cocoa powder OR 1/2 tsp pumpkin spice


1. Preheat oven to 350F.
2. In a pot over medium heat, heat butter, syrup, and sugar until melted. Do not let it boil.
3. Remove from heat and let cool for 2-3 minutes.
4. Stir in baking soda, ginger, and spices.
5. Sift in the flour, stirring until it becomes a soft dough.
6. Drop by rounded tsp full onto a baking sheet.
7. Bake for 6-7 minutes for chewy cookies, 8-10 minutes for crisp cookies.
8. Dust with powdered sugar.
9. Transfer onto baking rack to cool.
