Pollo alla Romana


4 chicken breasts, cubed or bias cut
1 large onion, roughly diced
4 cloves garlic, minced
4 strips bacon or pancetta, roughly chopped
1 can garbanzo beans
6 large tomatoes, peeled & roughly diced, keep as much juice as possible
2 cups chicken broth
1 TBSP each: red pepper flakes, thyme, oregano, basil
1 TBSP sugar
1/4 cup dry red wine
Parmesan or Romano cheese, finely grated
2-3 TBSP fresh mint, chopped
pinch each salt & pepper


1. In a large stock pot over medium heat, sautee bacon/pancetta, onion, and garlic until onion is clear.
2. Add tomatoes, wine, sugar, herbs, and 1 cup broth. Bring to a simmer and simmer 30 min stirring occasionally.
3. Add 1/2 cup broth, red pepper flakes, and chicken. Simmer 30 min.
4. Add last 1/2 cup broth, salt & pepper, and garbanzo beans. Simmer 10-15min more.
5. Turn off heat and stir in mint.
6. Garnish each bowl with cheese.
