One-Pot Tomato Basil Pasta


3-1/2 cups broth
1lb package spaghetti
1 small onion, diced
3 cloves garlic, minced
3 large tomatoes, peeled & diced, try to save as much juice as possible.
1 cup fresh (or 1 TBSP dried) basil, measured whole and loosely packed, roughly chopped.
1 tsp red pepper flakes
1/2 cup grated Parmesan
salt & pepper to taste
optional 2 pre-cooked polish/andouille sausages, cut into bite size pieces


1. In a large pot, heat 1 TBSP olive oil over medium until onion dropped in sizzles.
2. Sautee onion and garlic until onion is clear.
3. Add all other ingredients except cheese to pot.
4. Heat to boiling, boil 8-10 minutes until pasta is tender and broth is reduced.
5. Stir in cheese immediately before serving.

My mom's side of the family has decided that one holiday meal will be ~themed. Even after the "Amy can just stop at McDonald's on the way" debacle of the Easter get-together but ANYHOO. We're doing Italian for Christmas & I think I might be able to handle making this! \o/

This recipe makes ~4 servings, and you can leave out the red pepper flakes if you don't want spice (I know some people with Crohn's can't have any).
