Lobster Chowder


3-4 small whole lobsters or 2-3 large tails, steamed or boiled and roughly chopped
1 cup dry white wine or cooking sherry
3 cups seafood broth
1 cup heavy cream
6 strips bacon
3-4 gloves garlic, minced
1 small onion, diced
2-3 carrots, chopped
1 cup corn
handful fresh parsley, chopped
1 TBSP chili powder
1 TBSP salt & pepper (or Old Bay seasoning)


1. In a large stockpot over med heat, sautee the bacon until crispy (like almost overly crispy), remove and set aide to cool.
2. Add onion and carrot to the bacon grease, sautee for 2-3 min.
3. Add wine and garlic, bring to a simmer and simmer 5 min.
4. Add broth and seasonings
5. Bring back to a simmer and simmer for 20min.
6. Crush/chop bacon.
7. Add corn and cream, simmer for 5 minutes.
8. Add lobster and bacon, simmer 5 more minutes.
9. Serve topped with parsley and bacon as garnish.
