Curried Waldorf Chicken Salad


2 large chicken breasts, cooked and cubed or shredded
1 apple, cubed or julienned
1/4 cup chopped walnuts or pecans
1/2 cup grapes, quartered
1 stalk celery, chopped
1/2 cup mayonaise or plain yogurt
1 tsp curry powder or garam masala
1/8 tsp paprika
salt & pepper
optional: raisins, slivered almonds


1. Combine all ingredients in a medium bowl.
2. Stir well to combine.
3. Add more seasonings to taste if needed.
4. Cover and refrigerate at least 1 hour.
5. Serve with fresh bread or as lettuce wraps.
