Syrian Onion Bread

I used this to make sandwiches with the curried chicken salad (I cut each bread in half, so this made 4 sandwiches). It's a slightly dense, flat bread, with a hard crust and soft center.


2 cups flour
1/2 tsp salt
1/2 oz yeast
pinch sugar
1/2 cup + 2 TBSP water
1/2 tsp each cumin, ground coriander, optional curry powder
1 small shallot, chopped
2 cloves garlic, minced


1. Add the sugar to the water. Microwave 15-20 seconds until lukewarm.
2. Cream the yeast into the water, let activate 2-3 minutes.
3. Sift the flour, salt, and spices together in a medium mixing bowl.
4. Add the yeast water to the flour mixture. Fold with a wooden spoon until a soft dough forms.
6. Knead with your hands for 5-10 minutes until firm and smooth.
7. Cover with plastic wrap and let rise for 1 hour.
8. Knock back. Divide into quarters.
9. Roll out each quarter into a ~6in diameter round. Place on a seasoned or very lightly greased baking sheet.
10. Set aside and let rise while the oven is preheating.
11. Preheat oven to 400F.
12. Bake 15-20 minutes.
13. Best when eaten fresh.
