Syrian Onion Bread


2 cups flour
1/2 tsp salt
1/2 oz yeast
1 tsp sugar
1/2 cup + 2 TBSP water
1/2 tsp each cumin & ground coriander OR 1 tsp garam masala
1 small onion, chopped
2 cloves garlic, minced


1. Sautee onion in a small saucepan over med heat for 5-7 minutes. Set aside on a paper towel to drain excess moisture/oil.
2. Stir together sugar and water. Microwave 15-20 seconds until warm.
3. Cream the yeast into the water, let activate 5 minutes.
4. Sift the flour and spices together in a medium mixing bowl.
5. Add the yeast water, onion, and garlic to the flour mixture. Fold with a wooden spoon until a soft dough forms.
6. Knead with your hands for 5-10 minutes until firm and smooth.
7. Cover and let rise for 1 hour.
8. Knock back. Divide into quarters.
9. Roll out each quarter into a ~6in diameter round. Place on a seasoned or very lightly greased baking sheet.
10. Set aside and let rise while the oven is preheating.
11. Preheat oven to 400F.
12. Bake 15-20 minutes.
