Coconut Curry Chowder


4 cups broth
1 can coconut milk
1/2 cup uncooked rice
1 chicken breast, cooked and shredded
1 small onion, diced
2 potatoes, chopped
2 carrots, chopped
1 red pepper, seeds & membrane removed, chopped
2 gloves garlic, minced
2 TBSP curry powder
1 tsp chili powder
salt & pepper
1 TBSP olive oil


1. In a large pot, heat olive oil over medium heat, and sautee onion, carrot, red pepper, and garlic until onion is clear.
2. Add all other ingredients to pot. Bring to a simmer.
3. Simmer 30 minutes, until rice is cooked and vegetables are tender.
