Lemon Cake w/Lemon Glaze


1 stick butter
1 cup sugar
2 eggs
2 lemons - juice and pulp
1-1/4 cup flour
1-1/2 tsp baking powder
dash almond or vanilla extract
pinch salt

Glaze - 1 TBSP of the lemon juice and 1 cup powdered sugar


1. Set aside 1 TBSP lemon juice for glaze
2. Preheat oven to 400F
3. Cream butter and sugar together.
4. Add eggs one at a time.
5. Add flour, salt, baking powder, and extract.
6. Add lemon juice & pulp. (If you add the lemon before the flour it could cause the butter to curdle)
7. Pour batter into a 7-8" round cake pan.
8. Bake 15-25min, until toothpick comes out clean and top is springy.
9. While cake is cooling, mix the 1 TBSP set-aside lemon juice into the powdered sugar until smooth.
10. When cake is cooled completely, drizzle glaze over cake.
