Scalloped Potatoes


4 potatoes
1 cup milk
1+1/4 cup shredded sharp cheddar
2 TBSP butter
1 TBSP flour
1 tsp paprika
salt & pepper


1. Preheat oven to 400F
2. Thinly slice potatoes, and pat off excess moisture with a paper towl.
3. Grease a 9x9 casserole.
4. Layer potatoes into casserole.
5. In a small saucepan over med-low heat, melt butter.
6. Add flour and whisk for 2-3 minutes until golden.
7. Add milk, paprika, and salt & pepper, and whisk until bubbling.
8. Add 1 cup cheese and stir until melted and smooth. Continue stirring until sauce thickens slightly.
9. Pour cheese mixture over potatoes and stir in making sure all potatoes are coated.
10. Bake for 45-60 minutes.
11. Remove from oven and sprinkle extra 1/4 cup cheese on top.
12. Turn oven to broil and put casserole back in on the top rack.
13. Broil for 5 minutes until cheese starts to bubble and brown, watching carefully so cheese doesn't burn.
14. Remove from oven and let sit for 5 minutes before serving.
