Vegetarian Stew


3 cups vegetable broth
1/4 cup red wine
1/2 cup lentils
1/8 cup rice
1/4 cup black beans
1 carrot, chopped
2-3 potatoes, cubed
1 small onion, chopped
1 stalk clelery, chopped
3 cloves garlic, minced
1 TBSP each paprika, chili powder
1/2 tsp each corainder, cumin
1/2 tsp cayenne - optional if you want it more spicy
salt & pepper


1. Add broth, wine, garlic, and spices to a large pot and bring to a boil.
2. Add lentils, rice, beans, and vegetables.
3. Bring back to a boil, then reduce to simmer.
4. Cover and simmer until all liquid is absorbed, stirring occasionally, approx 30-45 minutes.
