Stir-Fry Beef and Broccoli


2lb flank steak, cut into bite-size strips or cubes
1 head broccoli, stem removed, chopped roughly into bite-size pieces*
1/4 cup corn or potato starch
2 servings cooked rice or noodles
1/2 cup soy sauce
1/2 cup water
1/2 cup brown sugar
2 cloves garlic, minced
1 tsp ground ginger
2-3 tbsp sesame or olive oil


1. In a small saucepan over med-low heat, combine soy sauce, water, brown sugar, garlic, and ginger. Keep simmering while you're doing the rest of the cooking. Stir occasionally.
2. Toss the beef in the starch, tap off excess, and set aside.
3. Heat a wok over med to med-high heat. Add oil.
4. Sautee beef for 2 min. Remove from wok and set aside.
5. Toss broccoli* into wok. Add more oil if needed. Sautee for 3-4 minutes.
6. Remove and set aside with beef.
7. Add sauce to wok to deglaze it, scraping the bottom with a spatula, for 2-3 minutes. You want those broccoli and meat bits and flavored oil in your sauce.
8. Add beef and broccoli back to pan with sauce, toss well for 2-3 minutes making sure everything is hot.
9. Serve over rice or noodles.

*note: if you hate broccoli, you can substitute a bell pepper or 1 cup snow pea pods instead.
