Palek Paneer


8oz container large curd cottage cheese*, including all liquid.
2 cups spinach, roughly chopped
1 large tomato, skinned and chopped
1/2 small onion, diced
2 cloves garlic, minced
1 TBSP garam masala OR 1 tsp ginger, 2 tsp cumin, 1 tsp ground coriander
1 tsp red chili paste or cayenne pepper
salt & pepper

2 servings cooked rice or lentils


1. In a pot over medium heat, sautee onion and garlic for 3 minutes.
2. Add all other ingredients except rice/lentils. Bring to a simmer.
3. Reduce heat and simmer 15-20 minutes.
4. Serve over rice or lentils.

*if you can get/make paneer or queso fresco it's better, use 1 cup cheese + 1 cup cream/coconut milk
