Sour Potato Salad


6 large potatoes, cubed
1/2 small onion, diced
6 pieces of bacon
1/4 cup rice vinegar
2 TBSP white sugar
2 tsp olive oil
1 tsp each: garlic powder, onion powder, dill, parsley, paprika
salt & pepper


1. In a pot over med-high heat, boil potatoes until tender, approx 10 minutes.
2. While potatoes are cooking, cook bacon until crispy (3min/side over med heat) and set aside.
3. Sautee onion in bacon grease until clear. Set aside.
3. Drain potatoes and set aside to cool.
4. In a small saucepan over low heat: heat vinegar, oil, sugar, and seasonings until sugar is dissolved.
5. Roughly chop bacon and combine bacon, onion, and potatoes in a large bowl.
6. Pour dressing over and stir.
7. Can be served hot or cold.
