Mocha Brownies


1 avocado
1/2 cup olive oil
2 cups flour
1 cup unsweetened cocoa powder
1-1/2 cups sugar
1-1/2 cups cold coffee
2 tsp baking soda
pinch salt
1 cup dark chocolate chips


1. Preheat oven to 350F
2. Combine avocado and olive oil in a large mixing bowl and mash, or combine in a blender and blend until smooth, then pour into a large mixing bowl.
3. Add coffee and stir well.
4. Add dry ingredients (except chocolate chips) 1 cup at a time, stirring well in between additions.
5. Pour into a 9x13" pan. Smooth out and top with chocolate chips.
6. Bake 25-30 minutes, until a toothpick inserted in the center comes out clean.
7. Let cool 10-15 minutes before cutting.
