Porcupine Meatballs


1lb ground beef or pork
1/2 cup uncooked white rice
1/2 small onion, diced
2 cloves garic, minced
1 egg or a handful of bread/cracker crumbs
salt & pepper

2 cups pre-made marinara or pizza sauce
1/2 cup beef broth
2 TBSP worchestershire sauce
2 TBSP dijon mustard
pinch red pepper flakes


1. Preheat oven to 350F
2. In a small bowl, mix meatball ingredients together.
2. Form into golf ball sized balls and place in a single layer in a 9x13" baking dish.
3. In a new small bowl, whisk sauce ingredients together.
4. Pour sauce over meatballs.
5. Cover with tinfoil and bake 45-60min until meatballs are browned through.
